  • 1/2 c
    7-up dough recipe
  • 1/2 c
    pineapple preserves
  • 1 c
    flaked coconut

  • 3 c
    self-rising flour
  • 1 can(s)
  • 1/2 c
  • 2 Tbsp

How to Make Pineapple Coconut Coffecake


  1. Preheat oven 375 degrees.
  2. Combine dough recipe ingredients to make a lumpy dough.
  3. Use 1/2 cup of dough and press dough into greased 9x13" cake pan.
  4. Spread preserves evenly over dough.
  5. Sprinkle coconut on top.
  6. Cover; let rise in warm place until double, about 30 minutes.
  7. Bake at 375 degrees for 25-30 minutes.
  8. If coconut gets too brown, cover loosely with foil last 5-10 minutes of baking.
  9. Cool 10 minutes in pan, then remove from pan.
  10. Serve warm or cold.
  11. (Any flavor preserves or jam may be used.)
