Ingredients

  • 4 lb
    eye of round roast
  • 1/3 c
    dijon mustard
  • 3 Tbsp
    pepper, freshly ground
  • SAUCE INGREDIENTS

  • 3/4 c
    butter, softened
  • 7 oz
    red peppers, roasted, drained
  • 3 Tbsp
    fresh basil, finely chopped
  • 3 Tbsp
    fresh parsley, minced

How to Make Pepper Coated Roast Beef with Red Pepper Basil Butter

Step-by-Step

  1. Heat oven to 425 and set a wire rack into a shallow roasting pan.
  2. Rub roast with mustard.
  3. Sprinkle pepper evenly over all sides of beef.
  4. Place roast on rack in pan.
  5. Roast 45-55 minutes or until a meat thermometer inserted in center registers 145 degrees.
  6. Remove roast to carving board, cover loosely with foil and let rest about 10 minutes (temperature will rise about 5 degrees).
  7. Meanwhile beat butter in a small bowl with an electric mixer or a wooden spoon until fluffy.
  8. Stir in minced peppers, basil and parsley.
  9. To serve: Thinly slice meat across grain and serve flavored butter on the side to spread over beef while hot.
