Drop Springerle Cookies

I love springerle cookies , but do not like the rolling and pressing of the forms.-So this is my lazy way out , and they are so good.- sooo if you love this cookie, you find it takes less time rolling and printing the cookies. Enjoy!

How to Make Drop Springerle Cookies

  1. Mix powdered sugar and eggs together with electric mixer in a large bowl. Add baking powder, flour, lemon rind and anise.
Mix at least a 1/2 hour (I know it sounds long but its worth it- use bread dough hood or paddle).
Drop by teaspoon or larger onto greased parchment paper on cookie sheet and let set at room temperature for 3 hours.
Bake at 325^ for 10 minutes do not brown. I usually let them set in cold oven over night. Then bake them in the morning.
