This is another recipe from the best man at our wedding, O, so long ago. Dear Husband wanted to do something for all his co-workers, so we made this. Our Grands love it w/hot chocolate or by it's self. We made two batches last night. All twelve co-workers got a pint of batter and the recipe. Merry Christmas to All! =) A single recipe makes about 8 1/2 quarts.

Ingredients For hot buttered christmas batter

  • 2 qt
    vanilla ice cream [costco supreme vanilla]
  • 1 lb
    butter, softened [2 c]
  • 1 lb
    brown sugar [2 1/3 c]
  • 1 lb
    powdered sugar [3 3/4 c]
  • 1 Tbsp
    cinnamon
  • 1 Tbsp
    nutmeg
  • 1 tsp
    cloves
  • 1 tsp
    ginger

How To Make hot buttered christmas batter

    Soften ice cream 30-45 minutes.

    Using mixer [i begin w/wisk attachment], cream butter, till light and fluffy, add sugars, beat till light and fluffy. Add spices mix thoroughly. This takes quite a bit of time.

    [Now i switch to the dough hook], add ice cream mix until smooth, scraping the sides of the bowl [5 qt.] often w/a metal spatula. Store covered in the freezer.

    To serve: Mix 1-3 tablespoon batter, in mug. Fill with hot water, stir and serve. Batter may be adjusted to suit taste. Our Grands really like w/hot chocolate, mix the hot chocolate first, add a rounded tbs of the batter there will be smiles all around and begging for seconds. =)
