Mary-Mom is my nickname for my step-mom. She is an awesome cook and I love her dearly! She showed me how to make this and my family absolutely loves it. It reminds me of corn pudding, only it's salty instead of sweet. Mary-Mom said she always serves it as a side dish with scalloped potatoes and ham chunks. YUMMO! I made a double batch this year to take to my brother's house for Thanksgiving dinner and there wasn't a bite left. I hope you enjoy it as much as we do. I will post a pic next time I make it!

Ingredients For mary mom's scalloped corn

  • 1 pkg
    saltine crackers
  • 1
    egg
  • 2 can
    corn, cream-style
  • 1/3 c
    milk
  • 3 Tbsp
    butter
  • salt and pepper
  • cooking spray

How To Make mary mom's scalloped corn

    Preheat oven to 350 degrees.

    Finely crush one sleeve of saltine crackers.

    Beat egg.

    Combine crackers, egg, corn, and milk.

    Add salt and pepper to taste.

    Spray casserole dish with cooking spray; pour mixture into dish.

    Either place random dabs of butter on top or melt butter and pour over top.

    Bake for one hour.
