    2 cups flour

    3/4 tsp. baking soda

    1/2 tsp. salt

    1 cup sugar

    1/4 cup butter, softened, 1/2 stick

    2 eggs
  • ·
    3 ripe bananas, mashed, 1 1/2 to 2 cups
  • ·
    1/4 cup plain or vanilla low fat yogurt
  • ·
    1 tbsp. rum extract or 3 tbsp. dark rum
  • ·
    1/2 tsp. vanilla extract
  • ·
    1/2 cup flaked sweetened coconut
  • ·
    1/2 cup chopped walnuts
  • ·
    2 tbsp. flour
  • ·
    1 tbsp. flaked sweetened coconut
  • ·
    1/2 cup powdered sugar
  • ·
    2 tbsp. strained fresh lime juice

How to Make Lime Glazed Coconut Banana Bread

Step-by-Step

  1. Mix 2 cups flour, the baking soda and salt in bowl. Mix the granulated sugar and butter in large mixing bowl. Beat until blended. Add eggs one at a time, mixing until incorporated after each addition. Add bananas, yogurt and flavorings and beat until smooth. Fold the dry ingredients into banana mixture with spatula til almost absorbed. Beat til fully incorporated. Fold in 1/2 cup coconut. Toss the walnuts and 2 Tbsp.flour in bowl til coated; discard any excess flour. Fold coated walnuts into batter. Spoon batter into 5 x 9 inch loaf pan sprayed with nonstick cooking spray and sprinkle with 1 Tbsp. coconut. Bake at 350 for 1 hour or til wooden pick inserted in center comes out clean. Cool in pan for 10 minutes. Remove to a wire rack and drizzle warm loaf with mixture of powdered sugar and lime juice. Let stand til cool. Serves 12 to 14
