This is for my mystery challenge using Ramen, Italian Sausage and Wheat bread.....BUT That being said isn't this an awesome way to reinvent the left over lo mein??!!! Am I right?!

Ingredients For play it "agein" lo mein

  • leftover lo mein
  • or
  • 1 pkg
    ramen noodles (any flavor)
  • 4 oz
    sliced mushrooms
  • 2
    links italian sausage, sliced (or the equivelant amount of any diced meats, bacon, chicken, pork, shrinp etc)
  • 1/2 md
    onion
  • 1
    rib celery, diced
  • 1 clove
    garlic, diced finely
  • 2 slice
    bread
  • 1-2 tsp
    butter or margarine
  • non-stick spray

How To Make play it "agein" lo mein

    preheat oven to 450 degrees and using a biscuit cutter cut bread into circles that will fit flatly into your ramekins

    boil ramen in 2 cups water until just tender, drain and set aside
  • 3
    sautee meat until just browned, add garlic, onion, celery and sweat until tender
  • 4
    add ramen, ramen seasoning pkt and mushrooms and cook until just heated through
  • 5
    slide it all to the side of the skillet and put a small dab of butter for each bread circle and brown the bread on each side

    spray ramekins and place a bread round in the bottom of each fill 3/4 full with the noodle mixture and top with one raw egg
  • 7
    place in a bain marie (ramekins in a shallow baking dish with hot water in it) bake until the eggs are the way you like them somewhere between 10-20 minutes (the picture is before I added the boiling water to the pan, YES, even with the parchment paper, we have really hard water and I wanted it to absorb the setaments)
