Mom's Stuffed Green Pepper Soup

This whole idea was a new find for me last winter and we really find it so easy and yummy.

Served with bread and salad and the meal is complete. Great for a cold winter day.

  • 2 lb
    browned and drained ground beef
  • 2 qt
  • 28 oz
    tomatoes, canned
  • 29 oz
    tomato sauce
  • 2 c
    chopped red and green peppers
  • 1 c
    chopped onions
  • 1/2 c
    uncooked rice
  • 2 tsp
    beef bouillon
  • 1 Tbsp
    brown sugar, firmly packed
  • ·
    salt and pepper to taste
  • 2 Tbsp
    taco sauce, hot (optional)

How to Make Mom's Stuffed Green Pepper Soup


  1. Add all ingredients to a large saucepan and bring to a boil.
  2. Reduce heat and simmer 35 or 45 minutes until veggies are to your liking and the rice is cooked.
  3. You could also cook in a crock pot on low for 4 to 5 hours.
