Ingredients

  • 1
    9 inch pie shell, baked
  • 1 c
    granulated sugar
  • 1/3 c
    cornstarch
  • 1/4 tsp
    salt
  • 1 1/2 c
    hot water
  • 4
    egg yolks, slightly beaten
  • 2 Tbsp
    butter
  • 6 oz
    can frozen lemonade
  • 4
    egg whites, room temperature
  • 1/2 tsp
    cream of tartar
  • 1/2 c
    granulated sugar

How to Make Lemon Meringue Pie

Step-by-Step

  1. In a saucepan, combine the sugar, cornstarch and salt.
  2. Slowly stir in the hot water.
  3. Add the remaining filling ingredients and cook over low heat until the mixture comes to a full boil.
  4. Lower the heat and cook a minute longer. Cool until lukewarm.
  5. Spread the filling into the pie shell.
  6. MERINGUE: Beat the egg whites and cream of tartar until soft peaks form. Add the sugar a tablespoon at a time, beating until stiff peaks form.
  7. Spread the meringue on top of the lemon filling and bake in a preheated oven at 325 for 20 to 25 minutes or until lightly brown.
