I mentioned I was having fried snapper for dinner and I was asked to post my recipe. Not a recipe,this is how I fry any fish.I don't really measure,these are approximate,just use your judgement.I like spicy food,but if you don't,you can omit the hot sauce and cayenne.
This is pan frying so use about 2 inches of oil,doesn't need to cover the fish. You'll know when to turn the fish when it's brown on the cooked side and the fish turns white on the top side. I like to use cast iron when I fry,but use what you have.
Chefs will tell you to add additional salt after frying,but I think that just makes food salty,I use additional hot sauce at the table.
This method is good for any fish.I use bread crumbs and the same method for frying shrimp or scallops.

How to Make Fried Seafood

Step-by-Step

  1. Rinse the fish in lemon juice,season with salt,pepper and hot sauce. Let it sit at least 20 mins or so. Mix corn meal, flour,salt,pepper and cayenne. Heat oil in cast iron skillet until hot.Dredge the fish in the cornmeal mixture,fry until the fish is golden brown, turning once. Add more hot sauce at the table.
