This is a go to dish for most of our family. Very easy to make this casserole is a one dish meal.

Ingredients

  • 1-1/2 lb
    lean ground beef
  • 2 c
    baking mix
  • 1/2 c
    cold water
  • 3 c
    shredded cheddar
  • 1/2 c
    onion, chopped
  • 2 c
    fresh mushrooms, coarsely chopped
  • 1 box
    broccoli, frozen
  • 4
    eggs
  • 1/2 c
    milk
  • 1/4 c
    grated parmesan cheese
  • ·
    salt and pepper

How to Make Broccoli Beef Squares

Step-by-Step

  1. Preheat oven to 350
  2. Spray 9x13 inch glass baking dish with non stick cooking spray
  3. Grate 3 cups of cheddar cheese
  4. Place frozen broccoli in a colander and run hot water over it until ice melts, then set aside to drain
  5. Start browning meat in a large pan, and while meat is cooking chop onions and mushrooms
  6. Add chopped mushrooms, onions and 2 1/2 cups of cheddar cheese to browned ground beef
  7. Mix remaining 1/2 cup cheddar with baking mix and water to make a dough, then press into pan
  8. Spread beef mixture across dough then sprinkle with broccoli
  9. Measure out milk in a 2 cup measuring cup and add Parmesan cheese,eggs and salt & pepper. Beat with a fork
  10. Pour egg mixture evenly over broccoli and bake for 30 minutes or until eggs look firm and pull away from the sides of the pan
