How to Make Kat's Balsamic Roasted Potatoes

  1. wash potato and slice length wise in half, make 3 slices out of each half and then dice into 1 1/2 in chunks, in an oven proof skillet ( i used my iron skillet and put a piece of heavy foil in, easy clean up and i just made a pouch with the foil before putting in oven)
  2. add oil to hot skillet, then add onion, pepper, garlic and potatoes, add some coarse ground black pepper and kosher salt, stir around then add balsamic vinegar, cook on stove stop for about 5 minutes, cover with foil and put in a 350 degree oven for 35 minutes
