3/4 lbpork loin
2 tspolive oil
1 Tbspsherry or reduced sodium chicken broth
1 tspdijon mustard
1/2 tspfresh, minced thyme or
1/8 tspdried thyme
1/3 capricot preserves
How to Make Apricot Glazed Pork Loin
- Place pork on rack in shallow roasting pan. Combine oil, salt and pepper and rub mixture over pork.
Bake at 450 degrees for 15 minutes.
In small bowl, combine remaining ingrediants; spoon over roast. Bake 10-15 minutes longer or until meat thermometer reads 160, basting occasionally with pan juices.
Let stand 5 minutes before slicing
