It's hard to find something good that you can cook just It was the best version of pork roast that I've ever eaten! My son ate the leftovers and wanted the recipe to make for his girlfriend. Since then most of the family have tried it and I've never heard a complaint

Ingredients For apricot glazed pork loin

  • 3/4 lb
    pork loin
  • 2 tsp
    olive oil
  • 1/2 tsp
    salt
  • 1 dash
    pepper
  • 1 Tbsp
    sherry or reduced sodium chicken broth
  • 1 tsp
    dijon mustard
  • 1/2 tsp
    fresh, minced thyme or
  • 1/8 tsp
    dried thyme
  • 1/3 c
    apricot preserves

How To Make apricot glazed pork loin

  • 1
    Place pork on rack in shallow roasting pan. Combine oil, salt and pepper and rub mixture over pork. Bake at 450 degrees for 15 minutes. In small bowl, combine remaining ingrediants; spoon over roast. Bake 10-15 minutes longer or until meat thermometer reads 160, basting occasionally with pan juices. Let stand 5 minutes before slicing
