Japanese Mash Potato Salad

Pleasant and refreshing, and different from the regular potato salads? The secret recipe for Japanese potato salad, which I haven't seen in any Japanese cookbooks: you mash the potatoes and you must use Japanese mayo, you know, that yellow squeezable tube with the drawing of a Casper-lookalike.

I have not tried it with sweet potato, but I'll definitely try it the next time.

  • 4 large
  • 2 medium
    sweet potatoes (optional)
  • 1 large
  • 1/2 c
  • 1 medium
    carrots (thin slices)
  • 1 medium
    japanese cucumber (thin slices)
  • 1 c
    japanese mayo
  • 1 pinch
    salt and pepper

How to Make Japanese Mash Potato Salad


  1. Peel the potatoes and cut into smaller pieces. Boil a pot of water, add 1 t salt and boil the potatoes until soft. Drain and mash. Let cool.
  2. Peel and dice apple into small cubes.
    Use a mandoline to slice the cucumber thinly.
  3. Wash the raisins (because they can be gritty) and pat dry on tea towels.
  4. Cut carrot into thin slices, cook in boiling water until soft-firm. Drain and let it cool.
  5. Mix everything together with enough mayo, salt and pepper. Chill well before serving.
