How to Make Pumpkin Pie Filling from Scratch

Step-by-Step

  1. Cut the tops off of the pumpkin as you would a jackolantern.
  2. Quarter the pumpkins lengthwise and scoop out seeds.
  3. Sprinkle brown sugar and spices, along with a small bit of the salt on each quarter's shell.
  4. Bake at 375 for 30 minutes or until flesh is tender.
  5. Let stand to cool.
  6. Cut away outer skin.
  7. Puree to desired consistency.
