How to Make Irish Potato Candy

Step-by-Step

  1. Cook potatoes with skins on. Let cool when done.
  2. Take skins off and mash the potato.
  3. Add powdered sugar and vanilla, enough sugar to make a ball of dough.
  4. Use a 1/2 cup of powdered sugar to roll out the dough sprinkle a little on top.
  5. Once rolled out spread the peanut butter over all of it.
  6. Roll it up like a jelly roll and wrap in wax paper.
  7. Refrigerate 4 hours or over night before serving.
