Ingredients

  • 1/2 c
    peanut butter, chunky
  • 1/3 c
    butter
  • 2
    medium bananas, mashed
  • 1/2 c
    molasses
  • 1 c
    sugar
  • 2 tsp
    vanilla
  • 4
    eggs
  • 1 tsp
    cinnamon
  • 1/4 tsp
    ginger
  • 2/3 c
    whole wheat flour
  • 1.33 c
    white flour
  • 4 c
    rice and wheat cereal, crushed
  • 1/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 6 oz
    chocolate chips
  • 1 c
    salted peanuts, chopped
  • 8 oz
    dates, chopped

How to Make Hiker Bars

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Then by hand: In a large bowl cream together peanut butter and butter.
  3. Mix in bananas, molasses, sugar and vanilla.
  4. Add eggs, one at a time, beating well after each egg.
  5. Stir in the cereal and sift together dry ingredients and mix into batter.
  6. Add chips, peanuts and dates.
  7. Pour batter into greased 9 x 13 pan.
  8. Bake in preheated 350 degree oven for 35 to 45 minutes.
  9. Cut into bars.
