Years ago my hubbie was stationed in Germany. While I was there I met some really nice ladies, and we would get together at least once a week for coffee and a treat.
Helen Neff and I were around the same age, and we had our babies just months apart, and we had a lot in common.
One of the things that Helen would make was this yummy cake, and I hadn't thought about it in years until Bea posted her recipe for the cake. There are similarities, but the recipies are a little different.

Ingredients

  • 3 c
    vanilla wafer crumbs
  • 2 c
    sugar
  • 4 large
    eggs
  • 1 c
    sweetened flaked coconut
  • 1 c
    pecans, chopped
  • 2 stick
    butter, melted
  • pinch
    salt

How to Make Helen's Vanilla Wafer Cake

Step-by-Step

  1. Helens directions are mix up together real well, and bake in a slow oven til done.
  2. The temp would be 325 degrees and time about 1 1/2 hour.
