I made this after making my 'Tangy Crock Pot Roast' recipe (link is in the directions.) I had made that with 2 London broil roasts in the crock pot, the 2nd one being used for this soup. This soup had a LOT of meat in it, so you can easily cut that 2nd roast in half and freeze the other half with broth for later...

This recipe is very forgiving. You can vary the veggies & seasonings you use to suit your taste.

How to Make Hearty Vegetable Beef Soup

Step-by-Step

 1. Put meat & broth from Tangy Crock Pot Roast in a crock pot. If you like a lot of meat, use the whole roast; if you like less meat, use only 1/2 and freeze the other 1/2 with broth for another batch of soup.
 2. Add water, veggies, stewed tomatoes & beef boullion.
 3. Cook on LOW for 6 hours.
 4. Using two forks, separate meat into chunks.
 5. Add egg noodles and continue to cook for another 20 mins.
 6. Stir soup & serve with hearty crusty bread.
