This dish is common across West Africa. It is very spicy!!

I found this recipe in an old issue of "Chile Pepper."

Ingredients

  • 1 lb
    cut-up chicken or 1 lb. beef stew meat
  • 4 c
    water
  • 2 c
    cooking oil
  • 3
    chopped onions
  • 16 oz
    can of tomato sauce
  • 2 Tbsp
    ground red pepper
  • 1 tsp
    salt
  • 1/2 tsp
    ground black pepper
  • 2 c
    brown or white rice

How to Make Jolof Rice

Step-by-Step

  1. Deep fry the chicken or beef until brown.
  2. When finished, remove the meat or chicken and leave about 1 cup of oil in the pan; fry the chopped onions in it.
  3. When the onions are browned, add the tomato sauce, cooked chicken or beef and 2 cups of water and simmer.
  4. Then add the 2 cups of rice and 2 more cups of water, mixing thoroughly.
  5. Cover and simmer slowely until the rice is done, about 20 to 30 minutes.
