  • 2 lb
    red snapper filet
  • 1/4 c
    grated onion
  • 2 Tbsp
    orange juice
  • 2 Tbsp
    lemon juice
  • 2 tsp
    grated orange peel
  • 1/2 tsp
    salt
  • 1/8 tsp
    nutmeg
  • ·
    pepper

How to Make Florida Red Snapper

Step-by-Step

  1. Thaw filets if frozen.
  2. Cut fish into 6 portions.
  3. Place in a single layer, skin side down, in a well-greased baking dish, 12x8x2 inches.
  4. Combine onion, orange and lemon juice, orange rind and salt.
  5. Pour over fish; cover and place in refrigerator to marinate 30 minutes.
  6. Sprinkle fish with nutmeg and pepper.
  7. Bake in a moderate oven, 350, for 25 to 30 minutes or until fish flakes easily when tested with fork.
