Creamy Red Potato Salad

The original recipe came from the Food Network; I've tweaked it a little bit. The reason I'm posting this? My 80-year-old grandmother hasn't been eating much lately (as she's gotten older, her appetite has decreased). But she loves this recipe so much this is one thing she WILL eat. So I figure if it's good for someone like her, with age and food sensitivity, it'd be good for most people. :)

Also - this is a double batch, because my family always fights over it. Halve the ingredients for the original recipe.

  • 6
    red potatoes, peeled and diced
  • 4 Tbsp
    sliced green olives w/pimento
  • 4 tsp
    nonpareil capers
  • 2
    celery ribs, finely chopped
  • 1/2 c
    red onion, finely chopped
  • 6
    hard-boiled eggs, chopped
  • 2 tsp
    apple cider vinegar
  • 3 tsp
    lemon herb seasoning
  • 6 Tbsp
  • 2-4 Tbsp
    parsley, finely chopped (optional)

How to Make Creamy Red Potato Salad


  1. Boil potatoes for approximately 20-25 minutes (until soft but not mushy).
  2. Combine all ingredients. Refrigerate overnight to give the flavors a chance to combine.
