1 lgonion, coarsely chopped

6 cwater

3potatoes, peeled and chopped

3zucchinis, sliced

1 lblow sodium soy sauce

tightly packed black pepper to taste

cmushrooms, freshly sliced

2 cspinach, fresh
How To Make creamy spinach soup

1Place onion in a large pot with 1/2 cup water.

2Cook and stir until onion softens slightly, about 3 minutes.

3Add remaining 5 cups of water, potatoes, zucchinis, and soy sauce.

4Bring to a boil, reduce heat, cover and simmer for 35 minutes.

5Add spinach and pepper.

6Cook for another 2 minutes.

7Remove from heat.

8Puree soup in batches in blender.

9Return to pan.

10Add mushrooms if desired.

11Heat gently for 5 minutes.

12Serve hot.
