I adopted this recipe. And it was good. I have never made cubed steak like this before. It's very tender.

Ingredients

  • 4
    beef cube steaks
  • 2
    eggs
  • 2/3 c
    milk
  • 3/4 c
    flour
  • 1 tsp
    salt
  • 1 1/2
    sleeves saltine cracker crumbs
  • 1/4 c
    vegetable oil
  • GRAVY INGREDIENTS

  • 1/4 c
    flour
  • 1/4 c
    vegetable oil
  • 2 c
    milk
  • 1 c
    diced onions
  • 1 tsp
    salt
  • 1 tsp
    pepper

How to Make Country-Fried Steak

Step-by-Step

  1. In a medium mixing bowl, beat eggs and 2/3 cup milk.
  2. Whisk in 3/4 cup flour and 1 teaspoon salt.
  3. Pour cracker crumbs into a soup plate or pie pan.
  4. Dip steaks first into the egg mixture and then into the cracker crumbs.
  5. Press crumbs into steaks.
  6. In a 12-inch skillet over medium-low heat, heat 2 tablespoons oil.
  7. Place prepared steaks in the heated skillet, and fry for 6 minutes on one side.
  8. Add the remaining two tablespoons oil, and fry 6 minutes on the other side.
  9. Remove steaks from pan.
  10. Prepare gravy: Stir 1/4 cup flour into drippings in the skillet.
  11. Add enough oil to wet the flour.
  12. Stir flour and oil until fully mixed; a bit at a time, whisk in milk, and deglaze the pan.
  13. Add onions, and after the milk comes to a boil, cook 1 minute longer.
  14. Stir in salt and pepper.
  15. Return steaks to pan, and cook another 20 minutes over very low heat.
  16. When turning steaks or moving them to the platter, slide a large spatula under the steak so as not to tear off the now moist batter.
  17. Spoon gravy over steaks, and serve.
