About ten years ago, I read about this in a Nora Roberts' trilogy that she set in Ireland. It just kept popping up. So, I went on-line and started looking for it and this is the recipe that I found. I really like this one the best.

Ingredients For colcannon

  • 6 c
    potatoes, mashed
  • 2 c
    prepared collard greens
  • nutmeg
  • dill weed
  • heavy whipping cream
  • butter, unsalted

How To Make colcannon

  • 1
    When making the mashed potatoes, use the heavy whipping cream and real butter to make them. Add the two cups of collards to the mashed potato mixture. Sprinkle lightly across the top of the bowl the nutmeg and the dill weed. Mix well. Make a crater of the mashed potatoes and fill the hole with melted butter. Dip chunks of bread into mashed potatoes to eat. Or, you can just serve it in individual bowls.
