    tomatoes, whole undrained, cut up
  • 1/2 c
    tomato juice
  • 5 Tbsp
  • 4 lb
    lean ground beef
  • 2 c
    onion, coarsely chopped
  • 2
    minced garlic cloves
  • 4
    bay leaves
  • 4 Tbsp
    chili powder
  • 3 Tbsp
  • 2 tsp
  • 2 tsp
    ground cumin
  • 2 tsp
  • 1.5 tsp
  • 2 Tbsp
    chopped cilantro
  • 4 Tbsp
  • 1/3 c
    cold water
  • 1/2 tsp

How to Make Cocoa Chili


  1. In an 8 quart saucepan or kettle, combine water, undrained tomatoes and tomato juice; begin cooking over medium heat.
  2. Meanwhile, in a skillet, melt shortening then add beef and onion.
  3. Cook, stirring occasionally, until browned; immediately add beef and onion to tomato mixture.
  4. Add garlic, bay leaves, chili powder, cocoa, oregano, cumin, sugar, salt and cayenne.
  5. Heat to boiling.
  6. Reduce heat; simmer 2-1/2 to 3 hours.
  7. Add additional water if chili gets too thick during cooking.
  8. About 30 minutes before chili is done, add cilantro.
  9. Mix flour with 1/3 cup water; add to chili.
  10. Continue to cook, stirring constantly, until chili is thickened.
  11. Remove bay leaves before serving.
