Even if you don't care for cauliflower, I believe you'll love this creamy, sweet/tart ice cold salad.

Ingredients For cauliflower salad

  • 1 whole cauliflower head, 3/4 cup mayonaise, 4 tbl. milk, 1 tsp. salt, 2 tbl sugar. 2 tbl white vinegar
  • black pepper, fresh ground if available.

How To Make cauliflower salad

    Trim off cauliflower leaves, stem and any discoloration. Cook cauliflower in about 2 inches of boiling water water in a covered saucepan until just tender. Drain on paper towels and let cool. (tip) adding a tablespoon of white vinegar to water keeps cauliflower odors away.

    Mix together 3/4 cup mayonaise, 4 tablespoons milk 1 teaspoon salt or salt substitute 2 tablespoons sugar or sugar substitute 2 tablespoons white vinegar Mix well, refrigerate for 5 minutes. Into a medium bowl break cooled cauliflower into 1-2 inch pieces. Add mayonaise sauce and lightly mix. Sprinkle top wih a little black pepper. (tip) Often, I add several green peas or a bit of grated carrot. Chill for several hours and serve.
