This was really easy to make and it took no time at all. A plus is that my children even LOVED it and asked for more.

  • 1 box
    chicken broth
  • 1/3 c
    chopped onions
  • 12 oz
    chopped broccoli
  • 2 c
    2% or skim milk
  • 1 1/3 c
    dry mashed potatoes
  • 2 c
    cubed chicken (i use bonelss thighs)
  • 1 c
    shredded swiss cheese
  • ·
    salt and pepper to taste

How to Make Broccoli-Potato Soup


  1. In a large saucepan, brown chicken and onions together, until chicken is done and onions are translucent.
  2. Add frozen broccoli and chicken broth.Heat to boiling.
  3. Stir in milk and dry potatoes until well blended.
  4. Add cheese and salt and pepper.
  5. Heat over low heat about 5 minutes, stirring occasionally, until cheese is melted and soup is hot.
