Ingredients

2 lbground buffalo,or ground turkey,or ground chuck.

1 largeonion

2 pkgranch style dressing mix

2 pkgtaco seasoning mix

1 can(s)each black beans,kidney,and pinto beans.

2 can(s)rotel diced tomatoes and chilies,chunky

6 slicebacon
-
1 largecan stewed tomatos

1 can(s)white corn.

2 can(s)beef broth, reduced sodium

16 ozbaby portebello mushrooms sliced
How to Make Santa Fe Soup
- in a large dutch oven,(i use a cast iron dutch oven when camping).cook bacon till almost crisp. remove with sloted spoon,reserve. in bacon drippings add onions,and mushrooms,cook till onion is soft. remove and reserve. add turkey,or beef or buffalo. cook till no longer pink. drain any fat. add onions,bacon,and mushrooms.
- add taco seasoning,and ranch dressing stir to mix well. add remaning ingredients ,add beef broth. Simmer for 2-2,1/2 hours. serve with tortilla chips,garnish with sour cream,cheese,and chopped gree oinons.
