Ingredients

  • 3.5 c
    black-eyed peas, fresh or thawed
  • 3 c
    chicken stock
  • 4 oz
    ham, finely chopped
  • 1 small
    yellow onion, chopped
  • 2 Tbsp
    balsamic vinegar
  • 3 large
    garlic cloves, minced
  • 1
    bay leaf
  • 1/2 tsp
    dried thyme, crushed
  • 1/4 tsp
    red pepper, crushed

How to Make Black-Eyed Peas with Ham

Step-by-Step

  1. Bring all ingredients to boil in heavy large saucepan; Reduce heat and simmer until peas are tender, stirring occasionally, about 45 minutes.
  2. Season to taste with salt and pepper.
  3. NOTE: May substitute red wine vinegar for balsamic vinegar.
