Since I received a copy of this recipe in 1980, I have baked this cake numerous times, and it is so good!

I love that it doesn't need any eggs, and the ingredients are usually in my cupboard, so I can bake it when the spirit moves me to bake a cake.

With a dusting of powdered sugar on top, or without, or with frosting, it is delicious and it can be made and baked in the pan.

  • 1 1/2 c
    all-purose flour
  • 1 c
  • 1/4 c
    cocoa powder, i used cacao powder
  • 1/2 tsp
  • 1 tsp
    baking soda

  • 1/3 c
    oil, i used safflower oil or vegetable oil
  • 1 tsp
    vinegar, i used raw organic apple cider vinegar
  • 1 tsp
    vanilla extract
  • 1 c
    cold water

  1. Preheat the oven to 350 degrees. Grease and flour a 9-inch cake pan.
  2. Sift the dry ingredients into the pan, then add all the wet ingredients and stir until batter is smooth.
  3. Bake 35 minutes, test in center with a cake tester or tooth pick,to be certain it's done. If it comes out clean it is perfect! Cool and dust with powdered sugar if desires or serve plain.
