When it's too hot and/or I don't want to cook supper, I often make a large salad with whatever fresh raw veggies are in the house and the refrigerator. Toss in some lettuce, radishes, grated carrots, tomatoes, cukes, cheese that is diced and/or some shredded cheese, some black olives, a little onion, leftover meat/poultry or coldcuts sliced, and a favorite dressing (store bought or homemade) and croutons if desired. We love it!
