Bean With Bacon Soup

Ingredients

2 cdry navy soup beans
-
2 qtwater
-
12 ozbacon, cooked and crumbled

·(or use equivalent amount of vegetarian bacon strips)

1carrot, finely chopped
-
1celery stalk, finely chopped
-
1/2 conion, finely chopped
-
1/4 ctomato sauce or ketchup
-
·salt and pepper to taste
How to Make Bean With Bacon Soup
- Soak beans 6 hours or overnight. Drain off soaking liquid.
- Place soaked beans, 2 quarts water, bacon, carrot, and onion in a large soup pot or crock pot. Cook 1 1/2 hours until beans are soft (at least 6 hours on low in crock pot). Add water if necessary to maintain soup-like consistency.
- When beans are done, stir in tomato sauce, salt and pepper to taste. Heat through about 10 minutes (30 minutes on high for crock pot).
- Serve with corn bread, or over spoon bread.
