Ingredients

  • 20 oz
    pineapple chunks
  • 1
    garlic clove, crushed
  • 2 tsp
    cornstarch
  • 2 tsp
    worcestershire sauce
  • 2 tsp
    dijon mustard
  • 1 tsp
    rosemary
  • 6
    chicken breasts, boned, halved and flattened
  • 1
    lemon, sliced

How to Make Baked Pineapple Chicken

Step-by-Step

  1. Drain pineapple, reserve juice.
  2. Combine reserved juice with garlic, cornstarch, worcestershire sauce, mustard and rosemary.
  3. Arrange chicken in shallow baking pan or broiler-proof dish, skin side up.
  4. Broil until browned.
  5. Stir sauce; pour over chicken.
  6. Bake at 400 for 30 minutes.
  7. Arrange lemon and pineapple slices around chicken.
  8. Spoon sauce from baking pan over all; continue baking 5 minutes.
  9. Garnish with fresh rosemary or parsley, if desired.
  10. Prep Time: 10 minutes. Bake Time: 40 minutes.
