I found this recipe on a "copycat"web site.It's like the creamy avocado salsa you can get at the "salsa bar" at El Pollo Loco.I've been making it for years now,it tastes just like the restaurant's salsa.It's not a hot salsa,just has a great flavor.Good on taco salads too.

    1 ripe avocado
  • ·
    1 jalapeno,stemmed and quartered
  • ·
    1 c water
  • ·
    1 t.white vinegar
  • ·
    3/4 t. salt
  • ·
    2 t. fresh cilantro,chopped
  • ·
    2 t. diced onion

How to Make "Copycat" Avocado Salsa

Step-by-Step

  1. Combine avocado,jalapeno,water,vinegar and salt in a food processor.Puree for several seconds on high until the jalapeno is finely minced,pour into a bowl.Stir in cilantro and onion,Cover and chill until ready to use.Makes 1 1/2 cups
