Easy, cheesy snack or meal Quesadillas
I am a diabetic who sometimes needs to make something quick to keep me healthy. If diabetics don't eat every 3 1/2 to 4 hours, they can become very ill! These ingredients are always on hand in my kitchen to keep me on track!

1 largesoft tortilla
1/8 c(or a handful) of shredded cheese, any kind!
1 Tbsp(optional) chopped onions or chives
1 Tbsp(optional) jalapenos
1/8 c(optional) canned white chicken
1/8 c(optional) chopped green chilis
How to Make Easy, cheesy snack or meal Quesadillas
- Center the tortilla on a microwaveable plate. Add cheese or other optional ingredients. Get creative! bacon or sausage? Who knows! the possibilities are endless!
- Microwave for one minute to ? depending on how many ingredients you add! Be careful because it will be hot to touch & hot to eat! Hot spicy or hot, hot, hot to handle!
- Top with salsa or eat it plain! My personal favorite is Monterey Jack & chopped chilis! Enjoy
