  • 3 medium
    apples, granny smith or a mixture of sweet and tart) cored, peeled and chopped
  • 2 c
    apple cider
  • 1 c
  • 1 tsp
    lemon peel
  • 1/8 c
  • 1/2 tsp
  • 1/4 tsp
  • 1 tsp
    vanilla extract

How to Make Apple Soup


  1. place all ingredients into large sauce pan and cook until apples are mushy, about 40-45 minutes
  2. remove from heat and puree in blender at low speed until smooth
  3. Serve hot with a swirl of whipped cream or vanilla yogurt.
