Ciao Bella Cranberry Orange Bread

When cranberries are in season I buy a bunch and freeze them right in the bags. When I need them I just thaw and chop.
I adjusted this recipe so you get a true orange flavor with the OJ and zest. And using oil instead of butter gives a moist consistency.
1/4 cvegetable oil
1 tsporange zest
1 tspbaking powder
1/2 tspbaking soda
3/4 corange juice, not from concentrate
1 ccranberries, fresh, chopped
How to Make Ciao Bella Cranberry Orange Bread
- In a large mixing bowl combine oil and sugar until creamy. Beat in egg and orange zest.
- Combine flour, baking powder, salt and baking soda in a seperate bowl and mix well.
- Add flour mixture with sugar mixture and fold in chopped cranberries. Do not over mix the bread will become tough.
- Pour into greased 9" X 5" loaf pan. Bake at 350 degrees for 60-65 minutes. Cool for 15 minutes remove from pan and cool bread completely on wire rack.
