I must be the pickest cake eater around ! It must be moist, and I mean moist, I don't do dry cakes. And this yummy cake fits the bill. It was given to me by a neighbor years ago when she baked me one for Christmas. I admit to eating over half the cake, well it was warm, in one sitting. Okay, actually I was standing at my sink, (don't tell anyone)! This cake does call for candied fruit, which I THOUGHT I didn't like. Well I was wrong, give this a try, you will not be disappointed. Even though this is really a cake, she baked it in a bread pan. Perfection

Ingredients For tried and true applesauce cake

  • 3
    large eggs
  • 1 1/2 c
    sugar
  • 1 c
    shortening
  • 1/2 tsp
    salt
  • 1 tsp
    cloves
  • 1 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 2 c
    applesauce
  • 3 c
    all purpose flour
  • 2 tsp
    soda, dissolved into 1/4 cup of hot water.
  • 1 to 1 1/2 c
    raisins, let come to a boil in water, drain and cool
  • 1 pt
    candied fruit, nuts and cherries (about 1 cup each)

How To Make tried and true applesauce cake

  • 1
    Pre-heat oven to 325 degrees and grease a glass or metal bread pan. I think this makes more than one, I can't remember from last Christmas.

    Mix all ingredients together except for the fruit and nuts. DO NOT OVER MIX

    Fold into the batter the fruits and nuts.

    Bake for 1 to 1 1/2 hours checking on every 5 min. after the first hour. Do not over bake. Allow to cool and enjoy. This bread is pretty as well as yummy !
