1/4 cchopped onion

4 1/2 tspplus 1/4c butter (divided)

1 clovegarlic (minced)

1 pkg(10 oz) frozen chopped spinach (thawed and squeezed dry)

6 ozcream cheese (cubed)

1/4 cseasoned bread crumbs

6boneless, skinless, chicken breast halves (6oz each)

1/2 tspsalt
-
1/2 tsppepper
-
1/4 choney
-
2 Tbspwhole grain mustard

1 Tbsplemon juice
How To Make spinach stuffed chicken breast

1In a large skillet, saute' onion in 4 1/2 teaspoons butter until tender. Add garlic; saute' 1 minute longer. Add spinach and cream cheese; cook and stir over low heat until until blended.

2Remove from the heat; stir in bread crumbs. Flatten chicken to 1/4 inch thickness; sprinkle both sides with salt and pepper. Place about 1/4 cup spinach mixture down the center of each chicken breast half. Fold chicken over filling and secure with toothpicks. Place seam side down in a greased 11x7x2 inch baking dish.

3Melt remaining butter; stir in the honey, mustard and lemon juice. Pour over the chicken.

4Bake uncovered, at 350 F, for 40 to 50 minutes or until a meat thermometer reads 170 F, basting every 15 minutes with pan juices.Discard toothpicks before serving.
