Ingredients For pop-eye and olive oil soup

  • 2 c
    fresh spinach leaves (2 big hands), chopped
  • 1 c
    courgette (zucchini), chopped
  • 1 c
    kale, chopped
  • 1/4 c
    olive oil, extra virgin or avocado oil
  • 1 pinch
    himalaya salt
  • 1/2 c
    pine nuts (or cashew nuts)
  • 2 c
    coconut milk
  • 1 c
    water

How To Make pop-eye and olive oil soup

    Put everything except the nuts in a big pan. Bring to boil and simmer for 5-10 minutes.

    Put in blender. Serve in bowls, sprinkle nuts. Enjoy!
