lad's okra soup

I love okra,I found this recipe in a magazine and made it like the recipe . The next time,I made it I changed the recipe,this is my version. The original recipe called for 3 slices of bacon ,which I omitted and I added corn because I like okra corn and tomatoes together. The original recipe also called for chicken broth,which I use often,but when I what a vegetarian soup,I like vegetable broth. Both versions are delicious. My husband likes it served over rice.

Ingredients For lad's okra soup

  • 2 tablespoons canola oil
  • 3 tablespoons butter
  • 1/2 t. dried thyme
  • 6 cloves garlic,finely chopped
  • 1 small yellow onion,finely chopped
  • 1 rib celery,finely chopped
  • 1 bay leaf
  • salt and black pepper,to taste
  • 1 lb okra,trimmed,cut into 1 inch slices
  • 2 tablespoon tomato paste
  • 6 c vegetable broth
  • 28 oz. can whole, peeled tomatoes,crushed
  • 1 c whole kernel corn

How To Make lad's okra soup

    Heat oil and butter in a 6-qt. saucepan over medium-high heat; cook, stirring, about 5 minutes. Add thyme, garlic, onion, celery, and bay leaf, season with salt and pepper, and cook, stirring, until soft, about 5 minutes. Stir in tomato paste; cook, stirring, until caramelized, about 2 minutes. Add okra,broth and tomatoes; bring to a boil, reduce heat to medium-low, and cook, until okra is very tender and soup thickens slightly, about 45 minutes. Stir in corn,simmer 5 minutes more.
