Ingredients For lentil vegetable stew

1/4 csherry

1/4 tspcinnamon

1 tspcurry powder

6 cvegetable broth, very hot

2 clentils, dry

4garlic cloves, chopped

1/2 cred bell pepper, diced

1/2 csweet potato, peeled and diced

1 ccarrots, shredded

1 conion, chopped

How To Make lentil vegetable stew

1In skillet over medium-high heat, bring sherry to simmering; add onion and saute 2 minutes.

2Add carrots, sweet potato, bell pepper and garlic; saute 1 minute or until sherry has evaporated.

3Spoon into slow cooker.

4Add remaining ingredients except salt and pepper; cover and cook on low 8-10 hours, until lentils are very soft and stew is thick.

5Salt and pepper to taste.

6Serve with a fragrant rice, such as basmati or jasmine.
