I tried this recipoe when we lived in Ohio, and not one for chopping everything small like the original,I heard this recipe from a chef on the Pittsburgh channel.Nice soup for a cold winter night

Ingredients For italian wedding soup

  • 1/2 lb
    ground beef or gound turkey
  • 1/4c
    seasoned bread crumbs
  • 1
    egg
  • 1 Tbsp
    parley
  • 1
    whole chicken cut up
  • 4 c
    water or chicken broth
  • 1
    small box orzo
  • 2 c
    spinach cut up
  • 1
    bag baby carrots
  • 1/4 c
    grated romano cheese
  • salt and pepper to taste
  • can use frozen meatballs

How To Make italian wedding soup

  • 1
    combine the ground beef or turkey,bread crumbs,egg salt and pepper in a bowl. mix well and form into small meatballs
  • 2
    meanwhile add chicken to water or broth, cover and boil for 5 minutes.add the meat balls and carrots to broth bring to a simmer cook for 1 hour. take out chciken and peel from bone.

    add orzo cook for 5 minutes add spinach ,put peeled chciken back in, stir in cheese and serve immediately
