Ingredients For hearty pumpkin soup

  • 2 granny smith apples, peeled and cut into quarters
  • 2 tsp. minced garlic
  • 1 red bell pepper, cut into quarters, seeded
  • 1 small onion, cut into quarters
  • 4 cups each water and chicken broth
  • 1 can pumpkin, 16 oz
  • 1 cup white wine
  • salt and pepper to taste

How To Make hearty pumpkin soup

  • 1
    Puree apples, garlic, bell pepper and onion in food processor. Mix with water, broth and pumpkin in a large stockpot and mix well. Bring to a boil over medium high heat, stirring frequently. Add wine, salt and pepper and simmer for 15 minutes, stirring occasionally and skimming the surface as needed. Garnish servings with a dollop of sour cream. Serves 8 to 10
