One day I had all this stuff in my refrigerator and pantry and I thought, "what can I make that is really healthy"? Well.... this is what I came up with. My husband loves it! It's a great soup any time of the year!

Ingredients For curried lentil soup

  • 1 large
    red onion, chopped
  • 4 or 5
    stalks of celery, chopped
  • 4
    carrots, chopped
  • 2
    ears of corn or 1 small can of corn
  • 4 clove
    garlic, minced
  • 1 1/4 c
    olive oil
  • 2 c
    lentils, dry
  • 1 qt
    chicken broth, low salt
  • 3 or 4 c
    water
  • 2
    links of smoked turkey sausage, sliced
  • 1 tsp
    curry powder
  • 1 tsp
    turmeric, ground
  • 1 Tbsp
    sea salt or taste to your liking
  • 1 bunch
    handful of chard or spinach for the greenery

How To Make curried lentil soup

  • 1
    Chop all vegetables and saute in olive oil for about 5 to 8 minutes. Add chicken broth.

    Then add lentils and water. Bring to a boil for one minute then simmer for 45 minutes to 1 hour.

    While simmering for the last 15 minutes, add turkey, curry, turmeric, greens, and sea salt.
