This is a wonderfully cool and refreshing soup on a hot summer's day. I love cucumbers and sour cream, so I made up this wonderful cool iced cucumber soup. With a touch of garlic and dill, it begins to sound like a Greek recipe to me. Maybe a little like tzatziki sauce! If that's the case... Then the Gods on Mt. Olympus would surely be proud! Put on your summer toga, and enjoy this cool, refreshing soup. The summer heat will just disappear! Nancy....8/14/12

On a super hot day, this cucumber soup is a refreshing lunch or side for dinner. This recipe is filled with cucumber and dill flavor. The ice melts slowly in the super creamy soup keeping it cold.

Ingredients For cool "iced" cucumber soup

  • 1-1/2
    cucumber, peeled and shredded
  • 1 Tbsp
    olive oil
  • 1 tsp
    salt
  • 1/4 tsp
    white pepper
  • 1 clove
    garlic, minced
  • 2 Tbsp
    fresh dill
  • 1-1/2 c
    yogurt or sour cream
  • *** a couple radishes, sliced cucumbers, sprig of parsley, crackers, and a toga are optional

How To Make cool "iced" cucumber soup

  • Spices, oil, and cucumber in a bowl.

    Mix the first 6 ingredients.
  • Shredded cucumber marinating.

    Marinate in the refrigerator for 2-4 hours.
  • Pureeing mixture in a blender.

    Then puree the mix in a blender.
  • Mixing yogurt into the soup.

    When ready to serve, mix in the yogurt or the sour cream.
  • Ice cubes added when serving.

    Put a couple of ice cubes in your soup bowl, before serving your soup.
  • A bowl of Cool Iced Cucumber Soup ready to serve.

    Add a few radishes and a couple of slices of cucumber on the side, to munch on, for a little crunch and color. Along with a few lightly buttered crackers. A small sprig of parsley is a nice touch. Don't forget your toga!... LOL My friend stopped by yesterday and we enjoyed this out on the deck in the shade. She loved it and was going to stop at the store for cucumbers.
