Ingredients For gazpacho

1 mdonion, chopped

1 mdcucumber, peeled and chopped

1green pepper, chopped

1garlic clove, minched

1/4 tspbasil

1/4 tsporegano

1/4 tspthyme
-
1/2 colive oil
-
1/2 cwine vinegar
-
1 tspsalt
-
4-5fresh tomatoes, or 1-16oz can **

1 ctomato or v8 juice
-
garnishes: cucumber, celery stick, avocado
How To Make gazpacho

1Blend all ingredients (except garnishes) in blender or food processor. Chill.

2NOTES: I use 1-14.5oz can of "ready cut" tomatoes. Serves 2-4 (serves more for a first curse before dinner, which is usually when I serve it. I keep a small amount of the chopped veggies aside and add them back after everything is blended .. gives the soup a little texture.
