Ingredients For baked potato soup

  • 2 stick
    unsalted butter
  • 1 c
    all purpose flour
  • 8 c
    whole milk
  • 5 lg
    potatos, baked
  • 2 lb
    bacon, cooked and crumbled
  • 3 c
    cheddar cheese, shredded
  • 2 c
    sour cream
  • 1 bunch
    green onions, thinly sliced
  • 1 Tbsp
    kosher or sea salt
  • 1 Tbsp
    ground black pepper
  • 1 clove
    garlic
  • 3 1/4 c
    grated parmesan cheese

How To Make baked potato soup

    Ensure potatoes have already been baked, cubed and skin removed
  • 2
    Melt butter in large pot over medium/high heat. Add Flour and whisk to combine until thickened.

    Whisking continuously, slowly pour in the milk and whisk until mixture is smooth.

    Add all remaining ingredients and lower heat to medium. Stir until cheese is melted and soup is warm enough to serve.
  • 5
    Top bowls of soup with a few shreds of cheese, bacon bits and green onion.
