In Miami we recently had a cold spell. On the coldest night I told everyone we should have chili. One of my roommates cannot eat tomatoes, so I researched different white chili recipes and came up with my own and my family loved it.

Ingredients For sonja's white chili

  • 2-16 oz can
    white northern beans
  • 2-14 oz can
    chicken broth
  • 1 small jar
    chicken soup base
  • 2-4 oz can
    diced green chiles
  • 1
    rotisserie chicken, deboned and diced
  • 1 pkg
    johnsonville mild or sweet italian sausage (5 in a pack) casing peeled and broken into a small meatball size pieces
  • 2 heaping tsp
    ground cumin
  • 1 tsp
    dried basil
  • 1 tsp
    dried oregano or oregano leaves
  • 3 Tbsp
    chili powder
  • 1/4 tsp
    cayenne pepper
  • 1/2 tsp
    black or white pepper
  • 2 tsp
    salt
  • 2 md
    onions chopped
  • 4
    garlic cloves chopped
  • 3 stalk
    celery chopped
  • 4
    carrots peeled and grated
  • 1/2 lg
    green bell pepper chopped
  • 1/2 lg
    red bell pepper chopped
  • 1 c
    water
  • 2 Tbsp
    olive oil
  • mexican cheese or 4-cheeses, shredded (optional)
  • sour cream (optional)
  • 4 c
    cooked parboiled rice (optional)

How To Make sonja's white chili

    IN A LARGE SAUCEPAN SAUTE GARLIC, ONIONS, CARROTS, CELERY AND PEPPERS IN OLIVE OIL.

    ADD ALL INGREDIENTS (EXCEPT RICE, SOUR CREAM AND CHEESE)TO A CROCKPOT AND SLOW COOK FOR 4 HOURS.

    SERVE IN BOWLS TOPPED WITH CHEESE AND SOUR CREAM. SOME MEMBERS OF MY FAMILY ALSO ENJOYED IT OVER WHITE RICE WITH THE TOPPINGS THEIR BOWLS. DELICIOUS!!!!
